One thing I noticed is that the videos don't show what happens when you zoom in (use mousewheel) while in camera view.
Blender will let you zoom in a good little bit, and this might help you with precision, similar to fspy's shift+click.

Is Perspective Plotter Addon also useful for turning pictures of people and animals into 3d figures?
As long as the image has some identifiable parallel lines or points that are perpendicular to each other - such as two eyes and perhaps the front and back legs if they are in a uniform pose, or something else in the image you can match to. Organic forms such as people and animals will be more challenging though. Email [email protected] and I can give some advice.
