The mirror uvs and vertex groups allow to do a complete full character or model working only half of it, its extremely usufull, could be extended to work with mask to generate asymmetrical models. Also that mirror modifier its a bit old, the lastest in the 2.79 trunk version has uv offset ideal to bake and avoid overlap error on baking.
i did this video a few years ago its a bit outdated, but the techiques im use there im using it today in pbr compatible models and works, http://www.youtube.com/watch?v=AB2KM7HGR1M
