what is "symmetrize"? I like this tutorial because it is fundamental to understand how to work in Blender, So thank you very much for creating this.
I am nevertheless I am a bit lost when it comes to getting an understanding.
I have worked in MAX for many years but I think 'm missing you important point.

Yes, in this video I've used a blender addon called HardOps, which allows to quickly mirror like that, without having to manually add the mirror modifier

Did you use the mirror icons in Edit mode ( top right on the UI)?

I used a mirror modifier, you can see it being added at 0:15
