I really enjoyed your tutorial! Animating with constraints is fascinating! The material aspects were awesome as well.
Oh, I had that issue with the interpolation, too. Coincidentally, I was programming Bezier curves for a hobby project and almost tried to solve it by doing something in Python! But then, in the letter Bevel parameters there is a mapping value that if you change it from "Resolution" to "Spline" seems to do the trick.

I wonder if you need two empties instead of one to track the curve. Also the Track To doesn't seem necessary since the pencil follows the empty.
I appreciated seeing the textures. I also noticed you show minor variations in position of the pencil at 9:38 when you probably wanted to show rotation. Do you need the position keyframes?
Would have been nice to see some of the animation graphs and keyframes for the pencil between letters.
Good tutorial! The only thing is that no one is writing by hand in this way in real life, it doesn't look quite natural.
