No doubt he's very good at Disney like characters. But is there really anything else besides yet another princessy doll with a too sweet Barbie face?

Yes, maybe you are right, ... but in real life most beautiful women àre somewhat similar to each other too. (If they deviate a lot from the average 'perfect face', they are suddenly no longer beautiful.)
And if someone wants to specialize in 'beautiful girls', that is okay, in my opinion.
Everyone must do what he likes the most - and what he can the best.
Yeah honestly they're just amplifying a lot of the same features that help to define beautiful looks and characters, and they're doing it in a way that speaks to the mind and captures ones attention. And it just so happens that, stylistically speaking, it may resemble the style of many other 3D artists because what they do works. And itll never get old. People will always eat it up. Now, with that being said, that kind saturation may lead to difficulties with certain job opportunities, but nonetheless itll never get old. And thats cool, let em do it
