Stunning!
A very good visual presentation.
I don't mean to be picky because I certainly don't have the skills to reproduce the scene; but there were two issues for me.
First, I have lived on beaches about half of my 70 years and I've never seen that big of a flock of birds. The sandpiper types run along the beach and fly only when they have to. Gulls do flock but I can't remember seeing more than 20 gulls in a flock at a time.
The boid animation (I'm guessing) is more like Starlings over a newly mown field around feeding time.
The other observation is that this didn't seem so much like a breakdown as just a couple of slides. I'm not trying to be overly critical, but to call the video a breakdown of how it was made I think is a stretch.
Just my opinion of a very good render.
I would call this a break down. It may not be the kind of break down you're thinking of (tutorial explaining the scene), but it's exactly like what a VFX breakdown looks like.
